It's time to get ya gumbo on!
We have another bustling weekend of events happening in New Iberia with the highlight being the World Championship Gumbo Cookoff. I know this weather has been off and on with giving us the fall feels, but I can eat a good bowl of gumbo no matter what the weather is outside. We had a great time last year sampling all the varieties and made sure to walk it off after with a stroll down Main Street with some window shopping. This year we plan on getting our gumbo on and walking to Shadows on The Teche to shop for some arts and crafts goodies.
Let's talk about Dyslexia. This is honestly the most important article I would like to highlight this week: How A Dyslexia Diagnosis Changed A Mom's Perspective. As a mother to children who have battled with this diagnosis, I found myself identifying with many parts of this article. Getting the diagnosis is key to helping your child succeed as well as allowing you to become the driving force that encourages and supports them.
There are many resources out there for parents and children who have a dyslexia diagnosis. However, as a homeschooling parent, I have found that changing fonts, teaching more lessons with visual aids, and implementing specific study tips for my dyslexic child has greatly improved our learning time. Another resource I would like to add for parents who may be looking for support is called Understood. From their podcasts, downloads, and weekly newsletters, I have found their information to be extremely helpful. For more information on IEP and working on a 504 plan for your child, click here.
We are still celebrating Hispanic Heritage Month so I thought we could add another easy recipe for a busy school night or a weekend party by making these pork carnitas! I love to get them at the local Mexican restaurants but have never tried my hand at making them myself. I will have to give this one a try!
And of course, we have to add some spooky fun in our newsletters each week during October! How about creating your own cookie graveyard? This version is an easy, no-bake recipe that you can do with littles or the teens for all of your Halloween parties. If you do make it, share your pictures with us! You can share your images on social by tagging us on Facebook or Instagram and/or using the hashtags #mkeats and #mackidnewiberia. We'd love to see them!
